The grapes come from some twenty hectares of young vineyards in the Atauta valley. They are of the Tinto Fino variety, grown on trellises and are complemented with grapes from 70 hectares of old vineyards ( from 40 to 60 years), which are to be found in several villages in Soria, 10 kilometres around the winery. The winery establishes the guidelines for the region`s vineyard growers, so as to obtain grapes only of the very best quality, these being grown in poor, sandy, pebbly soils which overlay a base of chalk and limestone. The climate is austere and continental, being intensly cold in winter, the summers being short but hot.
The wine is aged for twelve months in French oak casks (bought from the famous Cháteau Haut-Brion, and which are used for a maximum of one or two years). Each year the number of new casks is increased by 20% reaching the present figure of 700, and the wine undergoes only three rackings during the whole ageing process. Once the harmony between the wine and the wood has been achieved, the wine rests in the stainless steel tanks for three months before being bottled. The wine may contain sediments, as it does not undergo clarification nor stabilization.
