In an effort to reproduce the popular 13th century wines, where the grapes were heated up before fermentation, Jean Luc Baldes has turned up an intense black ink colour, deeply extracted wine, with plum and red fruit flavours. The overall production of The New Black Wine is limited to 3 000 bottles.
Tasted February 2010: After 16 years, including 10 in our cellars, this wine has evoluated towards an almost Bordeaux-like fruitiness and complexity. Intense whiff of dark berries, truffle and woodland. Still very focused and clean. The front palate shows poise and the fruit has a good presence and is still fresh. Somehow short on the finish, this amazing wine still delivers a lot, and at this advanced stage of its life, it is a rather good surprise. Pascal R.
