Established in 1838 Las Bodegas Gutierrez Colosia are situated on the banks of the river Guadelete in Puerto de Santa Maria. There, the temperature and humid conditions allow for a constantly thick layer of flor to lie on the surface of the wine, whereas in the rest of the Jerez DO, the layer of yeast tends to thin during the winter and summer months. Fino sherries from El Puerto de Santa Maria age without any great level of oxidation and therefore have a very distinctive taste and pale colour. The first Gutierrez Colosia Bodega has been almost perfectly preserved. The architectural style of the cellars with high ceilings and arched roofs is said to play an important role in the ageing of the sherries, as it allows for a better exposure of the wines to Puerto’s microclimates.
Notes from the winery:" Pale golden in colour, with a delicate almondy aroma, dry and light on the palate and aged under "flor" for at least three years."
