The name of the eau-de-vie reflects the Burgundian origin of these “Williams” pears which are delicious to eat. They are grown on the slopes of the hills, close to the vineyards, and they benefit from the same soil, orientation and climate. These conditions produce fruits which remind us of those of former times, just unforgettable !. As Joseph Cartron often demonstrates it, the Burgundian soil produces outstanding fruits as well as exceptional wines. The fruits are harvested at mid-August when fully ripe : it is the exact time when their aromatic power is at its peak. The fermentation of the pears starts soon after the harvest and lasts several weeks. In the first days of November begins the distillation by official itinerant distillers: wine-growers who still use a traditional pot-still, made of copper. These stills are frequently over a century old, as they are transmitted from father to son. The distiller carefully separates the first and the last runnings from the heart of the distillation, which he keeps exclusively. It shows then a volume of alcohol of around 50 %. The itinerant distiller is a man of experience who deals with small volumes and knows perfectly how to produce a high quality fruit brandy. After they are distilled the Williams pear is poured into glass demijohns protected by wicker baskets. At this stage begins the long period of ageing in an attic under the tiles of the roof that lasts from 2 to 4 years. The art and the ancestral know-how of the House of Joseph CARTRON strongly contribute to the quality of the ageing, and last but not least, Joseph Cartron excels in choosing the best time for commercialisation. "The nose is typical of Williams pears and very fruity. It is powerful and lengthy in the mouth. A straight bouquet of Williams pears remains in the mouth for a long time. It should be served chilled as an ideal after-dinner drink. "
