| The "Très Vieux Marc de Bourgogne Dames Huguette" 45% is the result of the distillation of "marcs" of appellation contrôlée Burgundy grapes. These are "marcs" from various growths in the Côte de Beaune and the Côte de Nuits, made with Pinot Noir grapes. The marcs selected by Joseph CARTRON are only lightly pressed. They still abound in wine. They are carefully kept in air-free vats before being distilled by the official itinerant distillers: wine-growers who still use a traditional pot-still, made of copper. These stills are frequently over a century old, as they are transmitted from father to son. The distiller carefully separates the first and the last runnings from the heart of the distillation, which he keeps exclusively. It shows then a volume of alcohol of around 50 %. The itinerant distiller is a man of experience who deals with small volumes and knows perfectly how to produce a high quality wine brandy. After they are distilled the "marcs" are poured into large oak casks. At this stage begins the long period of ageing that lasts at least 10 years. The art and the ancestral know-how of the House of Joseph CARTRON strongly contribute to the quality of the ageing, and last but not least, Joseph Cartron excels in choosing the best time for commercialisation. "The nose is powerful, very specific, but not aggressive. The Burgundian terroir taste appears immediately. It is powerful and lengthy in the mouth, and yet shows a supple and round blending. A complex bouquet of aromas remains in the mouth for a long time. It should be served at room temperature as an ideal after-dinner drink". |
