STÉPHANE VEDEAU, Nordoc Renowned winemaker Stéphane Vedeau is behind these amazing wines. The vines are tended using `Lutte Raisonnée‘ methods, the yields are low and the result is a range of wines showing great concentration and purity with spot-on varietal character. The Cabernet Sauvignon is grown on chalky-clay soils with crumbled stones vineyards. The grapes are fully de-stemmed, and a gentle extraction follows the short, cold maceration and fermentation. The wine then matured for 8 months on its fine lees, with micro-oxygenation. The nose is rich and intense, gorgeous ripe black berries, plum, cassis with hints of vanilla and toast. More ripe black berries are found on the palate, with lovely sweetness and juiciness, ending with wild herbs hints and finely grained tannins. |
