Who we are
Born in Gevrey-Chambertin, Burgundy, Pascal Rossignol has worked for three years with Burgundy wine producer and first cousin Joseph Roty (1985-1987) before to embark in a career in the Restaurant and Hotel industry (1988 - 1999). He openned Le Caveau wine shop in Kilkenny and lecaveau website with his wife Geraldine in August 1999. The wholesale side of Le Caveau was developped the following year, with the goal to supply true to their origins, real quality wines to the leading Restaurants, Hotels and wine shops across Ireland. Since 2007, Pascal gives wine lectures on the wine regions of France to the 12-week Certificate students at Ballymaloe Cookery School.
Geraldine Rossignol grew up in Augha, Co.Carlow, she worked in the Hotel industry in Ireland, UK and France. Geraldine split her time between Le Caveau wine shop, website orders management and accounts. A great "cordon bleu" Geraldine enjoys cooking at home, visiting fine restaurants and loves experimenting with food and wine matching.
Claire O'Boyle, Account Manager for Dublin, Wicklow, Kildare and Northeast counties, Claire is a graduate of the Quinn School of Business at University College Dublin and is also a Wine and Spirit Education Trust (WSET) diploma holder. An experienced teacher of wine appreciation to both consumers and trade, and an accredited lecturer for the London-based WSET, she provides a bespoke training service to our key customers.
Claire has worked a vintage in Barbaresco, Italy; and has also managed wine tours for Arblaster & Clarke in northern Italy. Much of her holiday time is spent travelling around the vineyard areas of the world, mainly France, Italy, Spain, Australia and California. She is passionate about educating and broadening her own and others’ palates about the incredible diversity of the wine world and also shares with us a love of those wines which have a real sense of place and character, and which have the kind of freshness and balanced structure that complements food so well.
Anna Zanotto, Shop Manager. WSET Diploma holder, Anna was born in Bassano del Grappa, Veneto, she joined Le Caveau in September 2007. Prior to joining us, Anna worked in several wine shops in Ireland including O'Briens Donnybrook.
